Its been a long day, the kids have just got back from school, the baby is tired, the other half is due through the door in half an hour – and you've got to make the tea.
Its so easy to throw convenience foods in the oven. But healthy, freshly prepared food can be just as quick, easy and far more nutritious. We worry that we havent got all the ingredients, or that you havent got the time to stand over the hob. The truth is that we probably have 99% of the ingredients already, we just dont know how to put them together, and frozen vegetables are just as nutritious, and in some cases more so than fresh vegetables.
At Pinkfairycake we are determined to make nutritious home prepared meals that the whole family will enjoy, and more importantly, will fit into our busy lives. Why not get the children to help you? Even toddlers can help out – and they are learning at the same time. Cooking provides valuable life skills and you are never too young to start! They learn simple maths through weighing, basic science by learning changes in consistency, state of matter and the effects of heat. They can show their artisic flair by decorating and garnishing dishes, and basic personal skills in taking pride in their finished products.
Here are just a couple of recipes that are a a family favourite and take no time at all to prepare. Why not make up a double batch and freeze whats leftover – that way you always have a meal in the freezer!
Ingredients:
- 1 Onion
- 1 Red pepper
- 250g/9oz cooked potatoes
- 8 Eggs
- Salt and Pepper
- 2 Tablespoons olive oil
Peel the and chop the onion.
Cut the pepper in half and scrape out the middle, then chop the pepper into small pieces.
Chop the potato into chunks
Break the eggs into a bowl and beat with a fork.
Add a pinch of salt and pepper
Preheat the grill to high.
Pour the oil into a frying pan and heat over a medium heat.
Add the onion and pepper and fry for 5 minutes. Stir as you heat.
Add the potatoes and fry for a further 2 minutes.
Pour the egg mixture over the contents of the frying pan and stir. Reduce the heat and leave to cook for 5 minutes. When the underside is cooked and the top is still slightly runny, put the frying pan under the grill for 2 minutes until the omlette is golden brown.
Cut the omlette into slices.
Serve with a salad and crusty bread.
You can add almost anything to this – grated cheese, chopped ham, chopped tomatoes, courgettes or mushrooms – whatever you have in the kitchen!
